Chicken & Mushroom Pasta with Soft Cheese & Pesto Sauce
Serves 4
Preparation time: 10 minutes
Cooking time: 20 minutes

Ingredients
400g Chicken breast (1 per person) - sliced
400g Fusilli Pasta
100g Mushrooms  - sliced
300g Tub Soft Cheese
250ml Pesto

Method 
1. Cook Pasta for 10 minutes in boiling water

2. Meanwhile stir fry chicken and mushrooms in a little oil for 5 – 10 minutes
3. Reduce the heat
4. Strain pasta and add to chicken and mushrooms. Stir
5. Add soft cheese and stir until pasta coated
6. Add Pesto and stir until pasta coated
7. Serve

Tips
If you don't want to make your own Pesto I would recommend Tescos Finest Pesto Sauce from the chilled cabinet. But most supermarkets sell ready made pesto.
For the low fat option use a low fat soft cheese.
You can always leave out the chicken for a vegetarian option, just add more mushrooms or some peppers.
