Chicken & Pineapple
Serves 4
Preparation time: 15 minutes
Cooking time: 25 minutes

Ingredients
200g Rice
400g Chicken Breast (1 per person) - diced
1 Onion - diced
1 piece of Root Ginger - diced
2 Cloves of Garlic - diced
1 Tin Pineapple in Natural Juice (Slices or chunks)
1tbls Cooking Oil
1 heaped tsp Cornflour
1 tsp Sesame Oil
1/2 tbls Light Soy Sauce
1/2 tsp Chinese 5 Spice
1/4 - 1/2 tsp Sugar
Pepper

Method
1. Heat oil in a Wok.
2. Lightly fry onions, garlic and ginger for 2 - 3 minutes

3. Add diced chicken breast and stir fry for 5 minutes or until chicken is cooked.
4. Drain the juice from your tin of Pineapple into a glass and put to one side, (you will need it later), if using slices you will need to chop them into chunks.
5. Add cornflour to pineapple juice and stir.
6. Add pineapple chunks and juice to wok, stir and reduce heat.
7. Put Rice on to cook.
8. Add Chinese 5 spice, sugar, sesame oil and soy sauce. Stir.

9. Season with pepper.
10. Simmer for 10 minutes and serve on a bed of rice.

Tips
You can get reduced salt soy sauce to keep that salt intake low.
When using pineapple slices drain the juice and then chop them in the tin.
You can always substitute granules for the ginger, onions or garlic.
Finally for a more authentic Chinese taste you could always serve on Egg Fried Rice
